I see you've missed Arizona. Start in Flagstaff and run Alt-89 South through Oak Creek Canyon and Sedona to Cottonwood, AZ. Then Highway 260 East all the way to Eager/Springerville, AZ. Drop South on 180 to Alpine, AZ and pick up US191 (It use to be US666 before the PC police changed the number). The next 90 miles is a winding twisty road with lots of altitude changes and ends up in Morenci, AZ where you literally drive through the middle of one of the largest open pit copper mines in the world. A little farther South you can pick up I-10 and blast for Houston.

If time is running short you can pick up US191 anywhere and run it South to I-10.

I believe all these states have Butler Motorcycle maps published that describe the best Rides. You can stitch together a route that fits your needs.
